Blueberry Buckle

A Grain Place Top Choice!

Ingredients
  • ½ C. shortening [Use organic butter; see “Important Notes”]
  • ¾ C. brown sugar
  • 1 egg
  • 2 C. sifted Grain Place Whole Wheat Flour
  • 2 ½ tsp. baking powder
  • ¼ tsp. salt
  • ½ C. milk
  • 2 C. fresh blueberries (or frozen, partially thawed & drained)
 Topping:
  • ½ C. brown sugar
  • ½ C. Grain Place Whole Wheat flour
  • ½ tsp. cinnamon
  • ¼ C. butter

Thoroughly cream shortening and sugar. Add egg and beat until light & fluffy. Sift the flour, baking powder and salt. Add to creamed mixture alternately with milk. Spread in greased 7 x 11 x 1 ½ pan. Top with berries. Mix topping dry ingredients and cut in butter until crumbly. Sprinkle over berries.

Bake at 350° for 45 minutes.
Cut in squares. Serve warm.
