Fall Apple Quinoa Salad


quinoa salad1 cup quinoa
1 cup boiling water
1 Honeycrisp apple finely diced
¼ cup zante currants or raisins
¼ cup sliced almonds-toasted
2 shallots finely diced
¼ cup olive oil
1/8 cup lemon juice
1 Tbsp. honey
1 tsp. curry powder
Pinch of salt and pepper


Pour water over quinoa and let set until water is absorbed and quinoa is tender, may need to be cooked a little.  Mix in apple, currants or raisins, almonds and shallots.  In a separate bowl mix: olive oil, lemon juice, honey, curry powder, salt and pepper.  Pour dressing over quinoa mixture and stir well.  Serve cold and enjoy!

Serves 4 to 6.
