Mediterranean Kamut® Salad


kamut salad2 cups Kamut® Khorasan Grain
Cups Water
½ tsp. salt
1 cup mix diced red pepper, orange pepper, and yellow pepper
½ cup diced sundried tomatoes
½ cup diced red onion
1 cup feta cheese
½ cup extra virgin olive oil
¼ cup balsamic vinegar



Rinse grain and put in pot with water and salt.  Cook on medium-low for about 1 hr. until grains are plump & a few have burst.  Remove from heat-drain excess water and rinse under cold water until water is clear.  Mix in peppers, tomatoes, onion and cheese.  Drizzle with oil and vinegar.  Serve cold and enjoy!

Serves 4 to 6.
*Spelt or wheat berries are also options for this salad – or a combination!
