Mexican Wheatberry Salad

Ingredients

wheatberry salad2 cups hard red wheat
4 cups water
½ tsp. salt
½ med. red onion finely diced
1 can organic diced tomatoes 14oz
1 can green chillies 4oz
1/8 cup soy sauce (tamari)
¾ cup olive oil
1/8 cup red wine vinegar
Salt and pepper to taste

Instructions

Rinse grain and put in pot with water and salt.  Boil for 1-2 hours (cooking time is greatly reduced if grains have been soaked about 8 hours), until aldanté.  Remove from heat-drain excess water and rinse under cold water until water is clear.  Mix in onion, tomatoes and chillies.  Drizzle with soy sauce, oil and vinegar.  Add salt and pepper to taste.  Serve cold and enjoy!

Serves 4 to 6.
*Spelt or Kamut berries are also options for this salad – or a combination!
