MARINATED SOYBEAN SALAD
3 cups of cooked soybeans (cook according to package directions)
1 red onion, chopped fine
1 red pepper, chopped fine
1 orange pepper, chopped fine
5 radishes, thinly sliced and chopped fine
1 European cucumber, thinly sliced and quartered
1 carrot, thinly sliced and chopped fine
1 bunch of fresh chopped chives
1 bunch of fresh chopped dill
1 bunch of fresh chopped parsley
For dressing:
1/2 cup seasoned rice wine vinegar
3/4 cup olive oil
2 T honey mustard
4 T honey
salt & pepper to taste
- Mix together first group of ingredients in large bowl.
- In smaller bowl, whisk together the dressing ingredients and mix into soybean mixture.
- Chill for at least an hour before serving.
This salad is best served at room temperature.
